Ingredients
- 2 medium potatoes, peeled and diced into 1cm cubes
- oil, for frying, plus 1 tbsp
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 2 bay leaves
- 250g ground beef
- 250g ground pork
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tsp sugar
- 1 tsp Worcestershire sauce
- black pepper
- 4 eggs
- cooked rice, to serve
Before you cook
- Pat the diced potatoes dry with a towel.
- Finely dice the onion and mince the garlic.
Steps
- Heat 3cm of oil in a pan to 180°C.
- Fry the potato cubes for 5-6 minutes until golden and crisp, then drain on paper towels.
- Pour off the frying oil and wipe the pan, leaving a thin film.
- Heat the remaining 1 tbsp oil and add the onion, garlic, and bay leaves.
- Cook for 3 minutes until the onion softens.
- Add the beef and pork and break it up with a spoon.
- Cook for 6-8 minutes, stirring often, until the meat is browned with no pink remaining.
- Stir in the light soy sauce, dark soy sauce, sugar, Worcestershire sauce, and a generous grind of black pepper.
- Simmer for 3 minutes until the liquid reduces and coats the meat.
- Fold the fried potatoes into the meat off the heat so they stay crisp.
- Fry the eggs sunny-side up in a separate pan.
- Spoon the minchi over rice and top each portion with a fried egg.
