Stamppot met Rookworst

The Netherlands' great winter comfort food, curly kale mashed straight into buttery potatoes and crowned with sliced smoked sausage, traditionally finished with a spoon of mustard.

Ingredients
- 1kg floury potatoes, peeled and chunked
- 400g curly kale, stemmed and shredded
- 1 rookworst (Dutch smoked sausage)
- 1/2 cup warm milk
- 3 tbsp butter
- salt
- black pepper
- mustard, to serve
Before you cook
- Peel and chunk the potatoes.
- Stem and shred the kale.
Steps
- Put the potatoes in a large pot and cover with cold salted water.
- Bring to a boil and cook for 15 minutes.
- Lay the kale on top of the potatoes without stirring it in.
- Place the rookworst on top of the kale.
- Cover the pot and steam for 10 minutes.
- Lift out the rookworst and set it aside, tented with foil.
- Drain the potatoes and kale and return them to the pot.
- Add the butter and warm milk.
- Mash everything together until mostly smooth but still a little rustic.
- Season with salt and pepper.
- Slice the rookworst into rounds.
- Serve the stamppot in bowls topped with the sliced rookworst and mustard on the side.
