A Mumbai chaat-stand favorite, crisp papdi discs built one bite at a time with potato, three contrasting chutneys, and a blizzard of crunchy chickpea sev.

Ingredients
- 24 papdi (crisp fried wheat discs)
- 2 potatoes, boiled, peeled, and diced small
- 1 small onion, finely diced
- 1 tomato, finely diced
- 1/2 cup green chutney
- 1/2 cup tamarind chutney
- 2 tbsp red garlic chutney
- 1 cup fine sev
- 1 tsp chaat masala
- 1/2 tsp roasted cumin powder
- fresh cilantro, chopped
- lime wedges, to serve
Before you cook
- Boil the potatoes, then cool, peel, and dice them small.
- Finely dice the onion and tomato.
- Have the green, tamarind, and garlic chutneys ready in separate bowls.
Steps
- Arrange the papdi in a single layer on a large plate.
- Top each papdi with a small spoonful of diced potato.
- Scatter the diced onion and tomato over the potato.
- Drizzle green chutney over each papdi.
- Drizzle tamarind chutney over each papdi.
- Dot a little red garlic chutney on top.
- Sprinkle the chaat masala and roasted cumin powder over everything.
- Cover generously with the fine sev.
- Finish with the chopped cilantro.
- Serve immediately with lime wedges, before the papdi can soften.
