A Madrid tapas-bar classic of crisp-fried potatoes topped with runny-yolked eggs and torn jamón, stirred together at the table so the yolk runs into the potatoes.

Ingredients
- 4 medium potatoes, peeled and cut into thin sticks
- 1 cup olive oil, for frying
- salt
- 8 eggs
- 150g jamón serrano or jamón ibérico, torn into pieces
- black pepper
Before you cook
- Peel the potatoes and cut them into thin fry-sized sticks.
- Pat the potato sticks dry with a towel.
Steps
- Heat the olive oil in a deep skillet over medium heat.
- Fry the potato sticks for 10-12 minutes, stirring occasionally, until golden and tender.
- Lift the potatoes out with a slotted spoon and drain them on paper towels.
- Season the potatoes with salt.
- Pour off all but a thin layer of oil from the skillet.
- Crack the eggs into the hot oil.
- Fry the eggs for 2 minutes until the whites are crisp at the edges and the yolks stay runny.
- Divide the fried potatoes among four plates.
- Lay the fried eggs on top of the potatoes.
- Drape the torn jamón over the eggs.
- Grind black pepper over the top.
- Bring to the table and break the yolks into the potatoes just before eating.
