An everyday Malawian relish of tender pumpkin leaves simmered with tomato and ground peanuts, traditionally spooned over nsima or rice.

Ingredients
- 1 tablespoon vegetable oil
- 1 small onion, chopped
- 4 cups (about 300g) pumpkin leaves, kale or spinach, stems removed and chopped
- 3 medium tomatoes, chopped
- 1/2 cup (60g) roasted peanut flour (or finely ground roasted peanuts)
- 3/4 cup (180ml) water
- Salt to taste
- Cooked nsima or rice, for serving
Before you cook
- Strip any tough stems from the pumpkin leaves and chop the leaves.
- Chop the tomatoes and onion.
- Grind the roasted peanuts into a coarse flour if not using store-bought peanut flour.
Steps
- Heat the oil in a saucepan over medium heat.
- Add the onion and cook for 3 minutes until softened.
- Add the chopped pumpkin leaves and a splash of the water.
- Cover and simmer for 5 minutes until the leaves wilt down.
- Stir in the chopped tomatoes.
- Cook for 5 minutes until the tomatoes break down.
- Stir in the peanut flour and the remaining water.
- Simmer for 5 minutes, stirring often, until the stew thickens slightly.
- Season with salt to taste.
- Serve hot over nsima or rice.
