A home-oven version of Fiji's earth-oven feast — chicken and taro steamed low and slow in a sealed pot until smoky-tender, the way it's cooked over hot stones for village celebrations.

Ingredients
- 1 whole chicken (about 3.5 lbs/1.6kg), cut into pieces
- 1/4 cup (60ml) sweet soy sauce
- 2 lbs (900g) taro (dalo), peeled and cut into chunks
- 1 cup (240ml) coconut milk
- 1 onion, sliced
- Salt to taste
- Banana leaves or foil, for lining
- 1 cup (240ml) water
Before you cook
- Cut the chicken into serving pieces.
- Peel the taro and cut it into chunks.
- Slice the onion.
Steps
- Toss the chicken pieces with the sweet soy sauce and let sit for 15 minutes.
- Preheat the oven to 325°F (160°C).
- Line a large Dutch oven with banana leaves or a double layer of foil.
- Arrange the taro chunks in the bottom of the pot.
- Scatter the sliced onion over the taro.
- Lay the marinated chicken pieces on top.
- Pour the coconut milk and water over the chicken and taro.
- Season with salt.
- Fold the banana leaves or foil over the top to seal in the steam.
- Cover the pot tightly with its lid.
- Bake for 3 hours without opening the lid, until the chicken is falling-apart tender.
- Carefully unwrap and serve the chicken and taro straight from the pot.
