Ingredients
- 1 lb (450g) ground beef
- 1/2 lb (225g) ground lamb
- 1/2 lb (225g) ground pork
- 8 garlic cloves, minced
- 1 teaspoon baking soda
- 1/2 cup (120ml) cold beef broth
- 1 teaspoon ground caraway seeds
- 1 teaspoon sweet paprika
- 1/2 teaspoon ground black pepper
- 1 teaspoon dried thyme
- 2 teaspoons salt
- Vegetable oil, for shaping and grilling
- Mustard, for serving
Before you cook
- Mince the garlic cloves.
- Dissolve the baking soda and salt in the cold beef broth.
- Measure out the caraway, paprika, pepper and thyme.
Steps
- Combine the ground beef, lamb and pork in a large bowl.
- Add the minced garlic, caraway, paprika, pepper and thyme.
- Pour in the broth with the dissolved baking soda and salt.
- Mix the meat by hand for several minutes until it becomes sticky and well combined.
- Cover the bowl and refrigerate for at least 6 hours, or overnight.
- Oil your hands and shape the mixture into finger-length cylinders about 3 inches long.
- Heat a grill or grill pan to medium-high heat.
- Brush the grill grates with oil.
- Grill the sausages for 4 minutes per side, turning occasionally, until browned and cooked through.
- Serve hot with mustard and bread.
