A North Indian spinach and potato curry finished dry rather than saucy, built on cumin and mustard seeds bloomed in ghee before the greens go in.

Ingredients
- 1 lb (450g) potatoes, peeled and cut into 1-inch chunks
- 3 tablespoons ghee or vegetable oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1-inch piece ginger, minced
- 1 teaspoon turmeric
- 1 teaspoon ground coriander
- 1/2 teaspoon garam masala
- 1 lb (450g) fresh spinach, roughly chopped
- Salt to taste
Before you cook
- Peel and cut the potatoes into 1-inch chunks.
- Finely chop the onion and mince the garlic and ginger.
- Roughly chop the spinach.
Steps
- Boil the potatoes in salted water for 10 minutes until just tender, then drain.
- Heat the ghee in a wide pan over medium heat.
- Add the cumin and mustard seeds and fry for 30 seconds until they sizzle.
- Add the onion and cook for 6 minutes until golden.
- Stir in the garlic and ginger and cook for 1 minute.
- Add the turmeric and ground coriander and stir for 30 seconds.
- Add the boiled potatoes and toss to coat them in the spices.
- Cook for 3 minutes, stirring gently.
- Add the chopped spinach in batches, stirring until it wilts down.
- Cook for 4 minutes, stirring occasionally, until the spinach is fully wilted and any liquid has cooked off.
- Sprinkle in the garam masala and season with salt.
- Stir once more and serve hot.
