A Czech pub staple — a thick slab of Edam or Gouda double-breaded and fried until the crust crackles and the cheese inside turns molten, piled into a bun with tartar sauce.

Ingredients
- 4 thick slices Edam or Gouda cheese, about 3/4 inch thick
- 1/2 cup (60g) all-purpose flour
- 2 eggs, beaten
- 1 cup (100g) breadcrumbs
- Vegetable oil, for frying
- 4 bread rolls
- Tartar sauce, for serving
- Lettuce and tomato slices, for serving
Before you cook
- Cut the cheese into thick slices if not already portioned.
- Set up three shallow dishes for flour, egg and breadcrumbs.
Steps
- Dredge each cheese slice in flour, coating it completely.
- Dip the floured cheese into the beaten egg.
- Coat the cheese in breadcrumbs, pressing gently to adhere.
- Dip the breaded cheese into the egg a second time.
- Coat it in breadcrumbs a second time for a thick double crust.
- Place the breaded cheese slices on a tray and refrigerate for 30 minutes.
- Heat about 1 inch of oil in a skillet to 375°F (190°C).
- Fry each cheese slice for 25 seconds per side until deep golden brown.
- Drain briefly on paper towels.
- Split the bread rolls and spread tartar sauce on both sides.
- Add lettuce and tomato to each roll.
- Place a fried cheese slice in each roll and serve immediately while the center is still molten.
