A late-night San Juan classic stacking grilled steak, roast pork and ham with melted cheese, shredded lettuce and the mayo-ketchup sauce locals call mayoketchup.

Ingredients
- 1 lb (450g) thin-cut beef steak
- 8 oz (225g) cooked, shredded roast pork (pernil), warmed
- 8 slices ham
- 4 slices cheese (American or queso de papa)
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 4 soft hoagie or French bread rolls
- 1/2 cup (120g) mayonnaise
- 1/4 cup (60g) ketchup
- 1 cup (90g) shredded iceberg lettuce
- 1 tomato, sliced
- 1 cup (100g) shoestring french fries, cooked
Before you cook
- Season the steak with salt and pepper.
- Mix the mayonnaise and ketchup together to make the mayoketchup sauce.
- Shred the lettuce and slice the tomato.
Steps
- Heat the oil in a skillet over medium-high heat.
- Sear the steak for 2 minutes per side until cooked to your liking, then rest and slice it thinly.
- Warm the shredded pork and ham slices in the same skillet for 2 minutes.
- Split each roll and spread the mayoketchup sauce on both cut sides.
- Layer the sliced steak on the bottom half of each roll.
- Add the shredded pork over the steak.
- Add the ham slices over the pork.
- Place a slice of cheese on top of the meats.
- Press the sandwich lightly in the warm skillet for 1 minute, or until the cheese melts.
- Top with shredded lettuce and sliced tomato.
- Pile the shoestring fries on top.
- Close the sandwich with the top half of the roll and press down gently.
- Cut in half and serve immediately.
