A tableside Greek taverna starter — a slab of salty kefalotyri or kasseri fried until crisp outside and soft within, sometimes flambéed with a splash of brandy.

Ingredients
- 1 lb (450g) kefalotyri or kasseri cheese, cut into 2 thick slabs
- 1/3 cup (40g) all-purpose flour
- 2 tablespoons water
- 3 tablespoons olive oil
- 1 lemon, cut into wedges
- Fresh oregano leaves, for garnish
Before you cook
- Cut the cheese into two even, thick slabs.
- Cut the lemon into wedges.
Steps
- Dip each slab of cheese briefly in the water.
- Dredge the damp cheese in the flour, coating it completely on all sides.
- Repeat the water dip and flour coating a second time.
- Heat the olive oil in a skillet over medium-high heat.
- Carefully place the cheese slabs into the hot oil.
- Fry for 2 minutes per side until golden brown and crisp.
- Transfer the cheese to a serving plate.
- Squeeze fresh lemon juice over the top.
- Scatter oregano leaves over the cheese.
- Serve immediately while hot and soft in the center.
