Ireland's hearty fry-up of rashers, sausages, black and white pudding, eggs and soda bread with grilled tomato — the dish that distinguishes an Irish breakfast from its English cousin.

Ingredients
- 4 slices Irish bacon (rashers)
- 4 pork sausages
- 4 slices black pudding
- 4 slices white pudding
- 2 tomatoes, halved
- 1 cup (70g) sliced button mushrooms
- 4 eggs
- 1 tablespoon butter
- 4 slices soda bread
- Salt and pepper to taste
Before you cook
- Halve the tomatoes.
- Slice the mushrooms.
Steps
- Heat a large skillet over medium heat.
- Add the sausages and cook for 10 minutes, turning occasionally, until browned and cooked through.
- Push the sausages to one side and add the rashers to the skillet.
- Cook the rashers for 3 minutes per side until crisp at the edges.
- Push the rashers aside and add the black and white pudding slices.
- Cook the pudding slices for 2 minutes per side until lightly browned.
- Remove all the cooked meats and keep warm on a plate.
- Place the tomato halves cut-side down in the skillet and cook for 3 minutes.
- Flip the tomatoes and cook for 2 more minutes, then remove.
- Add the mushrooms to the skillet and sauté for 4 minutes until softened.
- Remove the mushrooms and wipe out the skillet.
- Melt the butter in the skillet over medium-low heat.
- Crack in the eggs and fry for 3 minutes until the whites are set and the yolks are still soft.
- Toast the soda bread.
- Arrange the sausages, rashers, puddings, tomatoes, mushrooms, eggs and toasted soda bread together on warmed plates.
- Season with salt and pepper and serve immediately.
