A Swedish weekday hash of small-diced potatoes, onion and leftover meat fried until crisp in a hot pan, topped with a fried egg and a spoonful of pickled beetroot the way it's served in home kitchens across Sweden.

Ingredients
- 4 medium potatoes, boiled and cooled
- 2 tablespoons butter
- 1 large onion, diced
- 300g cooked ham, beef or sausage, diced
- Salt and black pepper, to taste
- 4 eggs
- 1 cup pickled beetroot, sliced
- Chopped parsley, for garnish
Before you cook
- Dice the boiled potatoes, onion and meat into even 1/2-inch cubes.
Steps
- Melt half the butter in a large skillet over medium-high heat.
- Add the onion and fry for 3 minutes until softened and lightly browned, then remove it to a bowl.
- Melt the remaining butter in the same pan.
- Add the potatoes in a single layer and press them down with a spatula.
- Fry undisturbed for 4 minutes until a golden crust forms on the bottom.
- Flip the potatoes in large sections and fry for another 4 minutes until crisp on most sides.
- Add the diced meat and the fried onion back to the pan.
- Toss everything together and fry for 2 more minutes until the meat is heated through.
- Season with salt and pepper.
- In a separate pan, fry the eggs in a little butter until the whites are set but the yolks are still runny.
- Divide the hash between four plates.
- Top each plate with a fried egg and a few slices of pickled beetroot.
- Scatter parsley over the top and serve immediately.
