A sprawling Portuguese boiled dinner that simmers several cuts of pork and beef, smoked sausages and a heap of vegetables together in one pot, served as separate courses of broth, meats, and vegetables.

Ingredients
- 500g pork ribs
- 500g beef shin or brisket
- 1 pork trotter or ear (optional, for richness)
- 1 chorizo or chouriço sausage
- 1 morcela (blood sausage, optional)
- 1 piece smoked bacon, 200g
- 1/2 head cabbage, cut into wedges
- 4 carrots, peeled and halved
- 4 potatoes, peeled and halved
- 2 turnips, peeled and halved
- 1 onion, whole
- 2 bay leaves
- Salt and black pepper, to taste
- Rice, to serve
Before you cook
- Trim excess fat from the pork ribs and beef if needed.
- Peel and halve the carrots, potatoes and turnips.
- Cut the cabbage into wedges.
Steps
- Put the pork ribs, beef, trotter if using, whole onion and bay leaves into a large pot and cover with water.
- Bring to a boil, skim off the foam, then reduce the heat and simmer for 1.5 hours until the meats start to turn tender.
- Add the bacon and chorizo and simmer for 30 more minutes.
- Add the carrots and turnips and simmer for 20 minutes.
- Add the potatoes and morcela if using, and simmer for 15 minutes.
- Add the cabbage wedges and simmer for 10 more minutes until all the vegetables are tender.
- Taste the broth and season with salt and pepper.
- Lift the meats out onto one platter and slice the sausages.
- Arrange the vegetables on a second platter.
- Ladle some of the cooking broth over plain boiled rice to serve as a first course, then serve the meats and vegetables together afterward.
