A Czech pub classic: a thick slab of Edam or Hermelín cheese double-breaded so it fries into a crisp shell without leaking, served oozing and molten with tartar sauce and fries.

Ingredients
- 4 thick slices Edam, Gouda or Hermelín cheese (about 1/2 inch thick)
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Oil, for frying
- 1/2 cup mayonnaise
- 1 tablespoon vinegar
- 1 teaspoon mustard
- 2 tablespoons chopped pickles
- 1 tablespoon capers, chopped
- 1 tablespoon chopped onion
- French fries, to serve
Before you cook
- Mix the mayonnaise, vinegar, mustard, chopped pickles, capers and onion together for the tartar sauce and chill it.
- Set up three shallow dishes: one with flour, one with beaten egg, and one with breadcrumbs.
Steps
- Dredge each cheese slice in the flour, coating it completely.
- Dip the floured cheese into the beaten egg.
- Press it into the breadcrumbs, coating it fully.
- Dip the cheese into the egg a second time.
- Press it into the breadcrumbs again for a thick double coating, making sure there are no gaps.
- Heat 1 inch of oil in a deep skillet to 350°F.
- Lower the breaded cheese into the hot oil.
- Fry for 2 minutes per side until deep golden brown and crisp, watching closely since it burns quickly.
- Lift the cheese out with a slotted spatula and drain briefly on paper towels.
- Serve immediately, while still molten inside, with the tartar sauce and french fries.
