Diner-Style Steak and Eggs

A hot skillet of seared minute steak and fried eggs, the classic American diner breakfast built for anyone who wants dinner at 7am.

Ingredients
- 2 beef minute steaks or sirloin steaks, about 170g each, 1.5cm thick
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 2 tbsp butter
- 1 tbsp vegetable oil
- 4 large eggs
- 2 cloves garlic, smashed
- 1 tsp chopped parsley, for serving
- Hot sauce, to serve
Before you cook
- Take the steaks out of the fridge 20 minutes before cooking so they come to room temperature.
- Pat the steaks dry with paper towel.
- Season both sides of each steak with the salt, pepper and garlic powder.
Steps
- Heat a heavy skillet over high heat for 2 minutes until it is smoking hot.
- Add the oil to the skillet.
- Lay the steaks in the pan without crowding them.
- Sear for 2 minutes without moving them.
- Flip the steaks and add 1 tablespoon of the butter and the smashed garlic to the pan.
- Cook for another 2 minutes for medium, tilting the pan to spoon the melted butter over the steaks a few times.
- Move the steaks to a plate and rest them loosely covered with foil.
- Wipe the pan, lower the heat to medium, and add the remaining butter.
- Crack the eggs into the pan, spacing them apart.
- Cook for 2 to 3 minutes until the whites are set and the yolks are still runny, spooning a little hot butter over the yolks if you like them glazed.
- Slice each steak against the grain into thick strips.
- Plate the sliced steak with two eggs per person.
- Scatter the parsley over the top and serve with hot sauce on the side.
