A South Carolina one-pot feast of shrimp, sausage, corn and potatoes boiled together in heavily spiced water, meant to be dumped onto a newspaper-covered table and eaten with your hands.

Ingredients
- 4 liters water
- 1/4 cup Old Bay seasoning
- 2 lemons, halved
- 6 cloves garlic, smashed
- 900g small red potatoes
- 450g smoked andouille sausage, cut into chunks
- 4 ears of corn, halved
- 900g large shrimp, shell-on
- Melted butter, for serving
- Cocktail sauce, for serving
Before you cook
- Scrub the red potatoes clean, leaving the skins on.
- Cut the sausage into thick chunks and the corn ears in half.
- Leave the shrimp shell-on but devein if you prefer.
Steps
- Pour the water into a very large pot and bring it to a boil.
- Add the Old Bay seasoning, halved lemons and smashed garlic to the boiling water.
- Add the potatoes to the pot.
- Boil the potatoes for 15 minutes until just starting to turn tender.
- Add the sausage chunks to the pot.
- Boil for a further 5 minutes.
- Add the corn to the pot.
- Boil for 8 minutes until the potatoes are fully tender.
- Add the shrimp to the pot.
- Cook for 3 to 4 minutes until the shrimp turn pink and opaque; do not overcook them.
- Drain the pot thoroughly in a large colander.
- Tip the drained shrimp, sausage, corn and potatoes onto a large platter or lined table.
- Serve with melted butter and cocktail sauce on the side.
