Bucharest's beloved skinless grilled sausage, a garlic-and-spice minced meat roll leavened with a touch of baking soda for its signature springy bite, eaten with mustard and bread.

Ingredients
- 500g ground beef (20% fat)
- 500g ground pork (20% fat)
- 6 garlic cloves, minced
- 1 tsp baking soda
- 1/2 cup cold beef stock or sparkling water
- 1 tsp sweet paprika
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp dried thyme
- 2 tsp salt
- 1 tsp black pepper
- Vegetable oil, for the grill
- Mustard and bread, to serve
Before you cook
- Mince the garlic.
- Dissolve the baking soda in the cold beef stock.
Steps
- Combine the ground beef and ground pork in a large bowl.
- Add the minced garlic, paprika, coriander, cumin, thyme, salt and pepper.
- Mix the meat and spices together with your hands for 2 minutes.
- Pour in the baking soda mixture gradually, kneading it into the meat.
- Continue kneading for 5 minutes, until the mixture turns tacky and slightly pale.
- Cover the bowl and refrigerate the mixture for at least 2 hours.
- Wet your hands and a cutting board.
- Divide the mixture into 12 portions.
- Roll each portion into a cylinder about 10cm long and 3cm thick.
- Heat a grill or grill pan to medium-high heat and brush it with oil.
- Lay the rolls on the grill without moving them.
- Let them form a light crust for about 4 minutes before turning.
- Turn the rolls once and grill for another 4 minutes, until cooked through and springy to the touch.
- Move the rolls to a plate and let them rest for 2 minutes.
- Serve hot with mustard and bread.
