A Catalan staple of toasted bread revived with grated ripe tomato, garlic and good olive oil, built fast and eaten the moment it's made before the toast goes soft.

Steps

  1. Toast the bread slices until golden and crisp.
  2. Rub the cut side of a garlic clove half over each warm slice of toast.
  3. Sprinkle a little flaky salt over each slice.
  4. Rub the cut side of a tomato half firmly over each slice of toast, pressing so the pulp and juice soak in.
  5. Keep rubbing each tomato half until only the skin remains in your hand.
  6. Drizzle the olive oil generously over each slice.
  7. Top with serrano ham or anchovies, if using.
  8. Serve immediately while the toast is still warm.
