The Czech open-faced sandwich found in every bakery window, a thin slice of baguette spread with potato salad and topped with ham, egg and pickle arranged like a tiny still life.

Steps

  1. Dice the peeled, cooled potatoes and carrots into small cubes.
  2. Blanch the frozen peas in boiling water for 2 minutes, then drain and cool.
  3. Combine the diced potatoes, carrots, peas, diced eggs, onion and diced pickles in a large bowl.
  4. Stir in the pickle brine, mayonnaise and mustard.
  5. Season the potato salad with salt and pepper.
  6. Refrigerate the potato salad for 15 minutes.
  7. Spread about 2 tablespoons of the potato salad on each slice of baguette.
  8. Fold a slice of ham decoratively and lay it along one edge of each slice.
  9. Place a small piece of cheese on top of the folded ham.
  10. Arrange a round of hard-boiled egg and a pickle slice on the other side of each slice.
  11. Top each sandwich with a halved cherry tomato.
  12. Garnish each sandwich with a small sprig of parsley.
  13. Serve chilled.
