A crumbly, griddle-cooked semolina bread from Morocco's Middle Atlas, closer in texture to cornbread than any yeasted loaf, split warm and spread with honey.

Ingredients
- 2 cups fine semolina
- 1/4 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 90g cold butter, cubed
- 3/4 cup warm milk
- Extra semolina, for shaping
- Honey and butter, to serve
Before you cook
- Cube the cold butter.
- Warm the milk.
Steps
- Combine the semolina, flour, sugar, baking powder and salt in a large bowl.
- Rub the cold butter into the dry ingredients with your fingers until it resembles coarse crumbs.
- Pour in the warm milk.
- Mix just until a soft, slightly sticky dough forms.
- Let the dough rest for 10 minutes.
- Divide the dough into 8 equal portions.
- Sprinkle a work surface with extra semolina.
- Press each portion into a disc about 1cm thick and 8cm across, coating lightly in semolina.
- Heat a dry nonstick pan over medium heat.
- Cook each disc for 3 minutes per side, until golden brown and cooked through in the center.
- Test one for doneness with a knife tip; it should come out clean.
- Serve warm with butter and honey.
