Fried banana fritters from the Portuguese-settled islands of São Tomé and Príncipe, where ripe banana is folded into a light batter and dropped into hot oil until golden, then dusted with cinnamon sugar for breakfast or a sweet snack.

Ingredients
- 4 very ripe bananas, mashed
- 1 egg
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 cup milk
- 1 tsp ground cinnamon, divided
- 2 tbsp sugar, plus 1/4 cup for dusting
- Pinch of salt
- Oil, for frying
Before you cook
- Mash the bananas until mostly smooth, leaving a few small chunks for texture.
- Mix the 1/4 cup sugar with half the cinnamon on a plate for dusting.
- Measure out the flour and baking powder together.
Steps
- Whisk the egg into the mashed banana until combined.
- Stir in the milk, 2 tablespoons of sugar, remaining cinnamon and salt.
- Fold in the flour and baking powder until just combined into a thick batter.
- Heat 2 inches of oil in a deep pan to 350°F.
- Drop tablespoon-sized scoops of batter into the hot oil.
- Fry for 2 to 3 minutes per side, until deep golden brown and cooked through in the center.
- Drain the fritters briefly on paper towels.
- Roll each warm fritter in the cinnamon-sugar mixture.
- Serve warm.
