Ingredients
- 1.5 lb pork shoulder, thinly sliced
- 1/2 cup brown sugar
- 3 tbsp soy sauce
- 4 garlic cloves, minced, divided
- 1 tbsp annatto powder
- 1 tsp salt
- 1/4 cup pineapple juice
- 2 tbsp vegetable oil
- 4 cups cooked day-old rice
- 4 eggs
- Oil, for frying
Before you cook
- Slice the pork shoulder thinly against the grain.
Steps
- Combine the brown sugar, soy sauce, half the garlic, annatto powder, salt, and pineapple juice in a bowl.
- Add the pork slices and massage the marinade into the meat.
- Cover and refrigerate the pork for at least 8 hours, or overnight.
- Heat 2 tablespoons of oil in a skillet over medium heat and fry the remaining minced garlic until golden and crisp.
- Remove the crisp garlic with a slotted spoon and set aside, leaving the garlic oil in the pan.
- Add the rice to the garlic oil and stir-fry for 4 minutes until heated through.
- Stir the crisp garlic back into the rice, season with salt, and set aside.
- Heat a clean skillet over medium heat and add the marinated pork along with its marinade.
- Simmer the pork for 6 minutes until the liquid reduces and starts to coat the meat.
- Continue cooking the pork, turning occasionally, for 5 more minutes until it caramelizes and browns at the edges.
- Fry the eggs sunny-side up in a separate pan for 3 minutes until the whites set.
- Plate the tocino alongside the garlic rice and top with a fried egg.
