Ingredients
- 900g lamb leg or beef sirloin, cut into 1-inch cubes
- Vegetable oil, for frying
- 2 tbsp garlic salt
- Hot sauce, to serve
- Saltine crackers, to serve
- Sliced white onion, to serve (optional)
Before you cook
- Pat the meat cubes dry with paper towels.
- Toss the cubes with a tablespoon of the garlic salt in a bowl and let them sit at room temperature for 20 minutes.
Steps
- Pour oil into a deep pot to a depth of 3 inches and heat it to 375°F.
- Lower a batch of meat cubes into the hot oil, taking care not to crowd the pot.
- Fry the cubes for about 2 minutes, until the outside is browned but the center is still rare to medium-rare.
- Lift the cubes out with a slotted spoon and drain them on paper towels.
- Repeat with the remaining meat in batches, letting the oil return to temperature between each.
- Sprinkle the hot cubes with the remaining garlic salt while they're still warm.
- Thread the cubes onto toothpicks or pile them onto a platter.
- Serve immediately with saltine crackers, hot sauce, and sliced onion on the side.
