Ingredients
- 500g fresh masa or masa harina mixed with water
- 0.5 tsp salt
- 500g turkey or chicken breast
- 1 onion, half sliced thin and half left whole
- 0.5 tsp dried oregano
- 1 cup chicken broth
- 1 cup shredded cabbage or lettuce
- 1 tomato, sliced
- 1 avocado, sliced
- 0.5 cup sour orange or lime juice
- Oil, for frying
- Habanero salsa, to serve
Before you cook
- Poach the turkey with the whole onion half, oregano, and broth, covered, for 20 minutes until tender.
- Shred the cooled turkey into bite-sized pieces, saving a splash of the poaching liquid to moisten it.
- Soak the thinly sliced onion in the sour orange juice with a pinch of salt for 20 minutes.
- Knead the masa with the salt until smooth and divide it into 12 balls.
- Flatten each ball between two sheets of plastic into a thin 8cm disc.
Steps
- Heat 3cm of oil in a skillet to 180°C (350°F).
- Slide a masa disc into the oil.
- Press it gently with a spatula so it puffs, then let it fry for about 1 minute until just set but still pale and pliable.
- Lift it out while it's still soft, not deep golden, and drain briefly on paper towels.
- Repeat with the remaining discs.
- Top each warm shell right away with the shredded turkey, cabbage, tomato, pickled onion, and avocado.
- Serve immediately with habanero salsa on the side.
