Before you cook

Steps

  1. Heat a lightly oiled rectangular or round nonstick pan over low heat.
  2. Pour a thin layer of the egg mixture into the pan, tilting it to cover the bottom evenly.
  3. Cook until just set, about 1 minute.
  4. Roll the set egg up from one side to the other using a spatula or chopsticks.
  5. Push the rolled egg to one end of the pan.
  6. Pour another thin layer of egg mixture into the empty space, letting it touch the rolled egg.
  7. Cook until just set, about 1 minute.
  8. Roll the new layer up around the existing roll.
  9. Repeat pouring, setting, and rolling until all the egg mixture is used.
  10. Press the sides of the roll gently with a spatula to square it off.
  11. Transfer the roll to a cutting board and let it cool for 5 minutes.
  12. Slice the roll into 1-inch rounds and serve.
