Ingredients
- 4 cups all-purpose flour
- 1/4 cup sugar
- 1 tsp salt
- 2 1/4 tsp instant yeast
- 1 cup warm milk
- 2 eggs
- 6 tbsp melted butter, plus extra for brushing
- 1 cup plum jam or sweetened quark
- powdered sugar, for dusting
Before you cook
- Warm the milk until it's just lukewarm.
- Stir the yeast and a pinch of the sugar into the warm milk and let it sit until foamy, about 10 minutes.
- Let the jam or quark filling come to room temperature if it has been refrigerated.
Steps
- Whisk the flour, remaining sugar, and salt together in a large bowl.
- Pour in the foamy yeast mixture, eggs, and melted butter.
- Knead the dough until smooth and elastic, about 8 minutes.
- Cover the dough and let it rise in a warm place until doubled, about 1 hour.
- Punch down the dough and divide it into 8 equal pieces.
- Flatten each piece into a small disc.
- Spoon a portion of the jam or quark filling into the center of each disc.
- Pull the edges of the dough up and around the filling and pinch them closed.
- Arrange the filled buns side by side, touching, in a buttered baking dish.
- Cover and let the buns rise again until puffy, about 30 minutes.
- Preheat the oven to 350°F (175°C).
- Brush the tops of the buns with melted butter.
- Bake until golden brown, about 25 minutes.
- Brush the hot buns with more melted butter as soon as they come out of the oven.
- Dust with powdered sugar before serving.
