Ingredients
- 1 cup self-raising flour
- 2 tbsp sugar
- 1 egg
- 3/4 cup milk
- 1 tbsp melted butter, plus extra for the griddle
- Golden syrup or jam, to serve
Before you cook
- Sift the self-raising flour and sugar into a bowl.
- Beat the egg into the milk in a separate bowl.
- Stir the melted butter into the egg and milk mixture.
Steps
- Pour the wet mixture into the dry ingredients.
- Whisk until the batter is smooth and thick enough to hold its shape when dropped from a spoon.
- Let the batter rest for 10 minutes.
- Heat a griddle or heavy non-stick pan over medium heat until very hot.
- Grease the griddle lightly with butter.
- Drop tablespoonfuls of batter onto the griddle, spacing them apart.
- Cook for 2 to 3 minutes, until bubbles appear on the surface and the underside is golden.
- Flip each scone and cook for 2 more minutes, until golden on both sides.
- Transfer the cooked scones to a clean tea towel and wrap to keep warm.
- Repeat with the remaining batter, greasing the griddle between batches.
- Serve warm with butter and golden syrup or jam.
