Ingredients
- 1kg potatoes, peeled
- 1 small onion
- 1 egg
- 3 tbsp plain flour
- 1 tsp salt
- 1/4 tsp black pepper
- Vegetable oil, for frying
- Sour cream or applesauce, to serve
Before you cook
- Peel the potatoes and the onion.
- Grate the potatoes and onion together finely, using long strokes in one direction.
- Tip the grated mixture into a sieve and press firmly to squeeze out as much liquid as possible.
- If the mixture still feels very wet, let it drain for another 2 minutes.
- Stir the egg, flour, salt and pepper into the squeezed potato mixture.
Steps
- Heat a generous layer of oil in a large frying pan over medium-high heat until it shimmers.
- Drop spoonfuls of the potato mixture into the hot oil, flattening each into a thin round.
- Fry for 3 to 4 minutes, until the underside is deep golden and crisp.
- Flip each pancake and fry for 3 more minutes, until golden on both sides.
- Transfer the cooked pancakes to a plate lined with paper towels.
- Repeat with the remaining mixture, adding more oil to the pan as needed.
- Serve immediately with sour cream or applesauce.
