Ingredients
- 8 Filipino sweet longanisa sausages
- 1/4 cup water
- 4 cups cold cooked white rice
- 4 cloves garlic, minced
- 3 tbsp vegetable oil, divided
- 4 large eggs
- Salt, to taste
- Sliced tomato and cucumber, to serve
- Garlic vinegar, for dipping
Before you cook
- Mince the garlic.
- Break up the cold rice with your hands so it isn't clumped.
Steps
- Place the longanisa in a cold skillet with the water.
- Cover and cook over medium heat for 8 minutes until the water evaporates.
- Uncover and fry the longanisa in its own rendered fat for 5 minutes, turning often, until browned all over.
- Remove the longanisa and set aside, keeping the fat in the pan.
- Add a tablespoon of oil to the pan if needed.
- Add the garlic and fry for 1 minute until golden and fragrant.
- Add the cold rice and break it up with the back of a spatula.
- Fry the rice for 5 minutes, stirring often, until every grain is coated and slightly crisp.
- Season the rice with salt and transfer it to plates.
- Wipe out the pan and heat the remaining oil over medium-high heat.
- Crack in the eggs and fry until the edges are crisp and the yolks are still runny.
- Plate each serving with garlic rice, two pieces of longanisa, and a fried egg.
- Serve with sliced tomato, cucumber, and garlic vinegar for dipping.
