Before you cook

Steps

  1. Pour the salted yogurt into the cheesecloth-lined bowl.
  2. Gather the corners of the cloth and tie them into a bundle.
  3. Hang the bundle over a bowl and let it drain in the refrigerator for 24 hours.
  4. Unwrap the drained yogurt — it should now be firm like soft cream cheese.
  5. Roll the firm yogurt into 8 small balls with your hands.
  6. Spread the chili flakes and za'atar separately on two small plates.
  7. Roll half the balls in the chili flakes until coated.
  8. Roll the remaining balls in the za'atar until coated.
  9. Arrange the coated balls on a serving plate.
  10. Scatter the diced tomato and onion around the balls.
  11. Drizzle everything with olive oil.
  12. Serve with warm pita for scooping.
