Ingredients
- 1 lb bull testicles, cleaned
- 2 cups buttermilk
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and black pepper, to taste
- Vegetable oil, for frying
- Ketchup, horseradish and lemon juice, for the sauce
Before you cook
- Peel off the outer membrane from the testicles and slice them into 1/4-inch rounds.
- Soak the sliced meat in the buttermilk for at least 1 hour in the refrigerator.
Steps
- Drain the sliced meat from the buttermilk, reserving the buttermilk.
- Whisk the flour, cornmeal, garlic powder, paprika, cayenne, salt and pepper together in a shallow dish.
- Dip each slice back into the reserved buttermilk.
- Press each slice into the flour mixture, coating both sides evenly.
- Set the coated slices on a plate and let them sit for 5 minutes so the coating sets.
- Heat 2 inches of oil in a deep pot to 350°F.
- Fry the slices in small batches for 3 minutes per side until deep golden brown.
- Lift the fried slices out with a slotted spoon and drain them on paper towels.
- Season the hot slices with a little extra salt.
- Stir together ketchup, a spoonful of horseradish and a squeeze of lemon juice for the cocktail sauce.
- Serve the fried slices hot with the cocktail sauce on the side.
