Before you cook

Steps

  1. Add the warm water to the flour mixture a little at a time, mixing as you go.
  2. Knead the dough for 5 minutes until it is soft and holds together without being sticky.
  3. Divide the dough into 6 equal balls.
  4. Flatten each ball between your palms into a disc about 1/4-inch thick.
  5. Heat a griddle or heavy skillet over medium heat.
  6. Brush the griddle lightly with coconut oil.
  7. Cook each roti for 2 to 3 minutes per side, pressing down gently, until golden-brown spots appear.
  8. Stack the cooked rotis under a clean towel to keep them warm.
  9. Serve warm with onion sambol or your favorite curry.
