Before you cook

Steps

  1. Whisk the warm milk, yeast, and 1/3 cup sugar together and let it sit for 5 minutes until foamy.
  2. Whisk in the egg, melted butter, cardamom, and salt.
  3. Stir in the flour a cup at a time until a soft dough forms.
  4. Knead the dough for 8 minutes until smooth and elastic.
  5. Cover the dough and let it rise in a warm place for 1 hour, until doubled.
  6. Roll the dough out on a floured surface into a large rectangle about 1/4-inch thick.
  7. Spread the cinnamon-butter filling evenly over the entire surface.
  8. Fold the rectangle in thirds like a letter, then roll it gently flat again.
  9. Cut the folded dough into strips about 1-inch wide.
  10. Twist each strip once and press the center down firmly with two fingers, flaring the ends up like ears.
  11. Place the shaped buns on parchment-lined baking sheets and let them rise for 30 minutes.
  12. Preheat the oven to 400°F (200°C).
  13. Brush the buns with the beaten egg and sprinkle generously with pearl sugar.
  14. Bake for 12 to 14 minutes until golden brown.
  15. Cool on a rack for at least 10 minutes before serving.
