
Freezer Breakfast Burritos

Hearty make-ahead burritos stuffed with eggs, ham, peppers and sharp cheddar.

Ingredients
- 8 oz cheddar cheese
- 1 yellow onion
- 1 bell pepper
- 2 Tbsp butter, divided
- Salt and pepper to taste
- 1 lb cooked ham
- 12 large eggs
- 8 large burrito-size flour tortillas
Before you cook
- Shred the cheddar cheese.
- Dice the onion and bell pepper.
- Dice the cooked ham.
- Cut 8 sheets of parchment paper for wrapping.
Steps
- Saute the onion and pepper in 1/2 Tbsp butter over medium heat about 5 minutes, until the onion turns translucent.
- Season the vegetables with salt and pepper and move them to a bowl.
- Cook the diced ham in another 1/2 Tbsp butter over medium heat about 5 minutes, until browned.
- Transfer the ham to a separate bowl and wipe out the skillet.
- Whisk all 12 eggs together in a bowl.
- Melt the remaining 1 Tbsp butter in the skillet over medium heat and pour in the eggs.
- Push the eggs gently toward the center as they set, stopping while they are still moist.
- Season the scrambled eggs with salt and pepper.
- Spoon eggs down the center of each tortilla.
- Top the eggs with the peppers and onions, then the cheese, then the ham.
- Fold the bottom of each tortilla up, fold the sides in, and finish rolling.
- Wrap each burrito tightly in parchment paper using the same folds.
- Label the parchment with the date and contents.
- Pack the burritos into freezer bags and freeze for up to 3 months.
- To reheat from frozen, microwave on defrost 5 minutes, then on high 1 to 2 minutes until hot through.
