  1. Beat the eggs, buttermilk, melted butter and vanilla together in a medium bowl.
  2. Whisk the flour, sugar, baking powder, baking soda, salt and optional almond flour together in a separate bowl.
  3. Stir the wet and dry mixtures together until nearly smooth, leaving a few small lumps.
  4. Pour about 1/3 cup of batter into the preheated 8-inch waffle iron.
  5. Cook 2 to 3 minutes, until the iron stops releasing steam.
  6. Lift the waffle out and repeat with the remaining batter, making about 10 waffles.
  7. Serve immediately, or reheat cooled waffles in a 350F oven for 6 minutes.
