Ingredients
- 2 large eggs
- 1 3/4 cups (397g) buttermilk
- 8 tablespoons (113g) unsalted butter, melted and cooled
- 2 teaspoons vanilla extract
- 1 3/4 cups (210g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon table salt
- 1/2 cup (48g) almond flour (optional)
Before you cook
- Melt the butter and let it cool.
- Spray the waffle iron with nonstick spray and preheat it.
Steps
- Beat the eggs, buttermilk, melted butter and vanilla together in a medium bowl.
- Whisk the flour, sugar, baking powder, baking soda, salt and optional almond flour together in a separate bowl.
- Stir the wet and dry mixtures together until nearly smooth, leaving a few small lumps.
- Pour about 1/3 cup of batter into the preheated 8-inch waffle iron.
- Cook 2 to 3 minutes, until the iron stops releasing steam.
- Lift the waffle out and repeat with the remaining batter, making about 10 waffles.
- Serve immediately, or reheat cooled waffles in a 350F oven for 6 minutes.
