Bulgaria's national salad, invented by the state tourism board in the 1950s and buried under a snowdrift of grated sirene that happens to complete the colours of the flag.

  1. Combine the diced tomato and cucumber in a wide serving bowl.
  2. Add the sliced onion and the pepper strips.
  3. Season with a good pinch of salt and turn everything gently.
  4. Whisk the oil and vinegar together with a pinch of salt.
  5. Pour the dressing over the vegetables and toss lightly.
  6. Stir most of the chopped parsley through the salad.
  7. Grate the sirene on the coarse side of a box grater directly over the bowl, covering the surface completely so no vegetables show through.
  8. Scatter the remaining parsley over the white cheese and serve at once, before the cheese starts to sink.
