A fast pantry tomato soup deepened with garlic, dried herbs and caramelized tomato paste.

Ingredients
- 2 cloves garlic
- 1/4 cup olive oil
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp dried thyme
- 1/4 tsp dried rosemary
- 1 pinch crushed red pepper
- 1/4 tsp freshly cracked black pepper
- 1 (6 oz) can tomato paste
- 1 Tbsp brown sugar
- 1 (28 oz) can crushed tomatoes
- 3 cups vegetable broth
Before you cook
- Mince the 2 cloves of garlic.
- Open the cans of tomato paste and crushed tomatoes.
- Measure out the dried oregano, basil, thyme, rosemary, red pepper and black pepper.
Steps
- Add the minced garlic, olive oil, oregano, basil, thyme, rosemary, crushed red pepper and black pepper to a sauce pot.
- Saute over medium-low heat for about 2 minutes, until the garlic softens and the herbs are fragrant.
- Stir in the tomato paste and brown sugar.
- Cook, stirring constantly, for 3 to 5 minutes until the paste darkens to a burgundy color.
- Pour in the crushed tomatoes and vegetable broth.
- Whisk until the soup is completely smooth.
- Raise the heat to medium and warm through, stirring now and then.
- Serve hot.
