Ingredients
- 1 rotisserie chicken (about 4 cups of meat)
- 1 cup seedless red grapes, quartered
- 1 cup red onion, diced
- 1 cup celery, diced
- 1/4 cup chopped walnuts
- 3/4 cup mayonnaise
- 1 Tbsp white vinegar
- 1 tsp salt
- 1 tsp freshly cracked black pepper
Before you cook
- Quarter 1 cup of seedless red grapes.
- Dice 1 cup of red onion and 1 cup of celery.
- Chop 1/4 cup of walnuts.
Steps
- Pull all the white and dark meat off the rotisserie chicken, about 4 cups.
- Shred the meat with two forks and place it in a large bowl.
- Add the quartered grapes, diced red onion, diced celery and chopped walnuts to the chicken.
- Combine the mayonnaise, white vinegar, salt and pepper in a small bowl.
- Whisk the dressing until smooth.
- Pour the dressing over the chicken mixture.
- Toss until everything is evenly coated.
- Serve on sandwiches or spooned over lettuce greens.
