Crunchy tuna salad and melted cheddar griddled between buttery sourdough slices.

  1. Stir the drained tuna, celery, red onion, pickles, mayonnaise, salt and pepper together in a medium bowl until blended.
  2. Lay out the 8 sourdough slices and set a slice of cheddar on each.
  3. Divide the tuna mixture over 4 of the slices.
  4. Close each sandwich with a remaining cheese-topped slice.
  5. Melt 1 Tbsp butter in a medium skillet over medium heat.
  6. Cook two sandwiches for 3 to 4 minutes, until the underside is golden.
  7. Add another tablespoon of butter, flip the sandwiches carefully, and cook 3 minutes more.
  8. Repeat with the remaining butter and sandwiches, then serve hot.
