Ingredients
- 1 (15 oz) can black beans, drained
- 1 cup frozen corn
- 1/2 cup red onion, finely diced
- 1 clove garlic, minced
- 1/4 bunch fresh cilantro, roughly chopped (about 1/2 cup)
- 2 cups shredded cheddar cheese
- 1 batch taco seasoning
- 10 flour tortillas (7-inch diameter)
Before you cook
- Drain the can of black beans.
- Finely dice 1/2 cup of red onion.
- Mince the garlic clove.
- Roughly chop about 1/2 cup of cilantro.
Steps
- Combine the drained black beans and frozen corn in a bowl.
- Add the red onion, garlic, cilantro, shredded cheddar and taco seasoning to the bowl.
- Stir until the filling is evenly mixed.
- Spoon about 1/2 cup of filling onto one half of each 7-inch tortilla.
- Fold each tortilla over the filling.
- Cook the quesadillas in a skillet over medium heat until the underside is browned and crisp.
- Flip and cook the second side until browned and the cheese has melted.
- Slice each quesadilla into triangles and serve.
