The savoury half of Indonesia's martabak cart: a paper-thin pastry parcel bulging with curried beef, egg and a fistful of spring onion, shallow-fried and cut into squares with pickled cucumber.

Steps

  1. Heat 2 tablespoons of oil in a frying pan over medium heat and soften the onion for 5 minutes.
  2. Add the garlic and ginger and fry for 1 minute until fragrant.
  3. Stir in the curry powder, coriander, turmeric and white pepper and cook for 30 seconds.
  4. Add the minced beef, breaking it up, and fry for 8 minutes until browned and dry.
  5. Season the beef with the salt and sugar, then tip it onto a plate and leave it to cool for 10 minutes.
  6. Beat the eggs in a large bowl and stir in the cooled beef, the spring onions and the leek.
  7. Heat the frying oil in a wide frying pan to 170C, about 1cm deep.
  8. Lay a wrapper on the work surface and spoon a heaped quarter-cup of the egg mixture into the centre.
  9. Fold the bottom corner up over the filling, fold in the two sides, then fold the top corner down to make a sealed square parcel.
  10. Slide the parcel seam-side down into the hot oil and fry for 3 minutes until deep gold.
  11. Flip the parcel and fry the second side for 2 minutes.
  12. Lift it onto a rack to drain and repeat with the remaining wrappers and filling.
  13. Cut each martabak into four squares and serve hot with the drained pickle alongside.
