Ingredients
6 thick slices casabe (cassava flatbread)
450g (about 1¾ cups) tomato sauce
225g chorizo, sliced into medium pieces
225g turkey ham, diced
75g (½ cup) sweetcorn, drained if canned
40g (¼ cup) green olives, sliced
55g (1 medium) red bell pepper (paprika), cut into thin strips
50g (½ cup) shredded mozzarella cheese
Before you cook
Preheat the oven to 200°C (390°F) and line a large baking sheet with parchment paper.
Slice the chorizo into medium bite-sized pieces.
Dice the turkey ham into small cubes.
Cut the red bell pepper into thin strips.
Slice the green olives if they are whole.
Drain the sweetcorn if using canned.
Steps
Arrange the 6 casabe slices in a single layer on the prepared baking sheet. If they are large, you may need two baking sheets.
Spoon a generous layer of tomato sauce onto each casabe slice, spreading it evenly with the back of a spoon and leaving a small border around the edges.
Sprinkle the shredded mozzarella evenly over the tomato sauce on each slice.
Distribute the chorizo pieces evenly across all six slices.
Add the diced turkey ham, sweetcorn, sliced green olives, and red bell pepper strips evenly over each slice.
Place the baking sheet in the preheated oven and bake for 7 to 10 minutes, until the mozzarella is fully melted, bubbling, and lightly golden at the edges.
Remove from the oven and let cool for 1 to 2 minutes before serving, so the toppings set slightly. Serve immediately.
