The cream cheese pastry every Puerto Rican bakery sells by the tray, rolled from a corner of puff pastry and lacquered with sugar syrup the moment it leaves the oven.

Steps

  1. Heat the oven to 200 C (400 F).
  2. Spoon a tablespoon of the cream cheese filling in a line across one corner of a pastry square.
  3. Roll the square from that corner towards the opposite one, keeping the roll snug.
  4. Set the roll seam-side down on a lined tray.
  5. Shape the remaining squares the same way, spacing them well apart.
  6. Brush each pastry with the egg wash.
  7. Bake for 20 minutes until deeply golden and puffed.
  8. Put the granulated sugar, water and honey in a small pan over medium heat.
  9. Boil for 5 minutes until the syrup thickens slightly and coats the back of a spoon.
  10. Brush the hot syrup generously over the pastries while both are still hot.
  11. Leave them for 10 minutes so the glaze turns tacky and glossy.
  12. Serve warm with strong black coffee.
