Steps

  1. Rub the cold butter into the flour and salt until the mixture resembles breadcrumbs.
  2. Add the cold water and bring the dough together without kneading it much.
  3. Wrap the dough and rest it in the fridge for 30 minutes.
  4. Boil the chard leaves in salted water for 3 minutes, until they wilt and turn dark.
  5. Drain the chard, cool it under cold water and squeeze it dry in handfuls, as hard as you can.
  6. Chop the squeezed chard finely and put it in a large bowl.
  7. Heat the olive oil in a pan and cook the onion for 8 minutes, until soft and sweet.
  8. Add the garlic and cook for 1 minute more, then tip the pan into the bowl of chard.
  9. Stir in the ricotta, parmesan, the 2 beaten eggs, nutmeg, salt and pepper.
  10. Taste the filling and adjust it; it should be well seasoned because the pastry is plain.
  11. Heat the oven to 190°C.
  12. Divide the dough two thirds to one third and roll the larger piece to line a 24 cm tin, letting it overhang.
  13. Spoon in the filling and level it, then press four deep hollows into the surface with the back of a spoon.
  14. Crack a whole egg into each hollow and season the yolks lightly.
  15. Roll the smaller piece of dough into a lid, lay it over and press the edges together.
  16. Trim the overhang, crimp the rim and cut a small vent in the centre.
  17. Brush the top with the egg yolk and bake for 45 minutes, until deep gold.
  18. Rest the tart for 15 minutes before cutting, so the slices hold together and each one carries an egg.
