The little steamer basket of glossy rib nubs that lands early at yum cha, seasoned with nothing more than crushed fermented black beans, garlic and a slick of cornflour.

  1. Toss the marinated ribs with the cornflour, water and oil until every piece is slick and glossy.
  2. Fold the crushed black beans and garlic through the ribs.
  3. Spread the ribs in a shallow heatproof dish in a single layer so they cook evenly.
  4. Scatter the sliced chilli over the top.
  5. Bring a wide pan of water to a hard boil and set the dish in the steamer.
  6. Steam over high heat for 22 minutes.
  7. Check the thickest rib; the meat should pull from the bone but keep a little bite.
  8. Lift the dish out and scatter over the spring onion.
  9. Serve straight away, with rice to soak up the black bean juices.
